So many things have transpired in the last couple of years. One of which is the understanding that we (hubby and I) need to get ahead, catch up on things that have been put off and our life needs to change if we want to succeed with that goal.  Everyone has had to breakdown and have this mental conversation about what needs to change at some point during these last four years.
What can I do to make ends meet?  No eating out... check! Plan out weekly meals... check! Cut back on extras ... check! (what extras?) Only put $20 in the tank at a time (because your prayin' it will go down)... check!! Start looking for ways to bring in extra $$ without taking too much time away from the family...check!! Realizing it's time to get a job because your son had to have surgery....Reality CHECK!!

Life could always be worse,  no matter what be grateful for what you have, but Man! The things I could do with a little more. So my blog got a face lift and I got a Facebook page and I'm also looking for work...yeah, I think that covers it!

Black and White Cupcakes

I found this while searching for the best tasting and decorating frosting.


makes 7 1/2 cups of frosting

20 minutes 20 mins prep

1 cup butter or margarine
1 cup vegetable shortening
2 lbs powdered sugar (8 cups)
1/2 teaspoon salt
1 tablespoon meringue powder (optional)
1 teaspoon vanilla
1 teaspoon almond extract (or coconut extract)
1/2-1 teaspoon clear butter flavoring
4-6 ounces whipping cream

Cream butter and shortening until fluffy.
Add sugar, meringue powder, about half of the cream, and continue creaming until well blended.
Add salt, flavorings and enough whipping cream to make the consistency you need.
Beat at medium speed until icing is fluffy.
You may substitute all shortening for the butter, which will give a pure white icing, but the flavor will not be quite as good.
I used butter and real vanilla and the icing turned out a very pale ivory, which I personally prefer to a stark-white icing.
The meringue powder gives the icing a light crust, but it remains soft underneath.


* I used half n half instead of the whipping cream, I used butter crisco instead of adding butter flavoring and made Black frosting.  YUM!

100 grams of Cottage Cheese
6-7 med Strawberries cut in half
1pk Stevia
4 drops English Toffee Stevia
put everything in the food processor and pruee until smooth

The BEST Gluten Free Bread for Bread Machines

I've done it!!! Really, it's true! I have made the best tasting gluten free bread. It's so yummy, I crave it. The recipe is below. Please don't repost, if you would like to share it please post the link. Thanks so much. Happy Baking!





You need 4 bowls (1 of those should be large mixing bowl, 3 small/ med bowls)

~In smaller bowl
1 1/2 cups water warmed(aprox. 110*)
1 tsp sugar                                                                                       
1 package of rapid rising / bread machine yeast

Let all above ingredients dissolve, it until foamy.(if it doesn't foam up yeast may be bad)

~In small bowl
1/3 cup butter (melted)

~In medium bowl
3 eggs  whipped

~In large bowl mix together
3 cups gluten free flour mix (recipe below)
2 tsp xantham gum
1 tsp salt
2 tsp baking soda
2 tsp gf baking powder

Once the yeast is dissolved, combine all wet ingredients into the bowl with the dry ingredients. I use a whisk to mix.  Batter will be a wet consistency. Do Not Taste the Batter, something about the wet ingredients makes it taste horrible...trust me, I made that mistake. Fold batter into the bread machine pan evenly and put on gluten free setting and bake. * I take the paddle out so you have a longer rising period and no kneading period, during the baking process. The plus with this is you won't have a giant hole in your loaf.*


Gluten Free Flour mix
1 part soy flour
1 part sorghum flour
1 part tapioca flour (not starch)
1 part brown rice flour

Enjoy!!
